This year, my new year’s resolution was sparked by several conversations with my long time and very close friend, Mark. He had decided that 5 am workouts were the best way to go. We both reminded each other of all of the celebrities and inspirational people who developed habits of getting up at 4 and 5 in the morning to start their day.
I grew up in a very small town called St. George, SC. Back in the 1980’s, it was noticed that per capita, St. George residents consumed more grits that anywhere else in the country. Needless to say, I LOVE LOVE LOVE LOVE GRITS! Ha! Being from the Lowcountry, I’m also no strange to shrimp and grits so it was only natural, that at some point, I’d be “veganizing” this recipe.
