I grew up in a very small town called St. George, SC. Back in the 1980’s, it was noticed that per capita, St. George residents consumed more grits that anywhere else in the country. Needless to say, I LOVE LOVE LOVE LOVE GRITS! Ha! Being from the Lowcountry, I’m also no strange to shrimp and grits so it was only natural, that at some point, I’d be “veganizing” this recipe.
