
A co-worker friend , Lindsay, shared a recipe for peanut butter protein bites about 2 years ago. As much as I liked them, I didn’t make them much because I was focusing on weight loss and wanted my calories and fat intake to count towards other meals. Always having peanut butter on hand for a smoothie ingredient or the occasional peanut butter and banana toast, a sudden craving hit me recently and this is what happened.
During my grocery shopping excursions, I usually buy a new pantry item to experiment with. I had a jar full of chickpea flour and figured it would be the perfect replacement for protein powder since I didn’t have any and it totally was! A batch of these tasty little babies can last me a while in the fridge. Especially since I can get by with crumbling 1/2 protein bite as a snack topping as I did on this bowl of Nice Cream. This Crunchy Peanut Butter Chickpea Bites recipe will remain a staple for me. They are sweet, delicious, versatile, packed with protein and healthy fats. It can’t get any better than this.

What you’ll need for this SUPER SIMPLE Recipe
Peanut Butter – The ultimate creamy base for these lovely balls of tastiness
Chickpea Flour – The perfect binding setter to keep these balls together while adding a unique nutty flavor and additional protein
Oats – Some fiber because we all need more fiber in our lives
Maple Syrup – adds the perfect amount of sweetness to this recipe
Pumpkin seeds – gives these bites some crunch from the inside
Pinch of salt – balances all of the flavors
Cocao nibs – a burst of crunchy chocolate flavor for the win!
Chia seeds – a final level of crunch reminiscent of a nestle crunch bar

- 1/2 cup Thai Basil
- 1/2 cup wide noodles
- 1/2 cup can
- 1 tbsp cilantro
- 1/4 cup coconut amino sauce
- 1 pinch himalayan pink sea salt
- 1 tbsp fresh lime juice
- 1 tbsp chia seeds

- Combine first 6 ingredients into form into 9 evenly shaped balls
- Dip one side of each bit in cacoa nibs and sprinkle lightly with a bit of chia seeds
- Let set in the refrigerator for at least 20 minutes. Enjoy!
Kept in an airtight container or zip lock back, these Crunchy Peanut Butter Chickpea bites can last up to 1 month in the refrigerator.
