
MAPLE BALSAMIC KALE
Creating this recipe was so much fun because I needed a simple and healthy greens dish to accompany my vegan shrimp and grits. You can always simmer some basic greens and they’ll be delicious just like that, but in terms of flavor, I do my best to make a marriage that can last a lifetime. In this case, the savory and creamy sauce from the shrimp and grits could use a slight bit of sweetness as well as some acid for balance. Let me just say, this particular marriage of flavors ended up being a match made in taste buds heaven! Did I just come up with this. Bam! Wow, I totally amaze myself at times.
Anyways, pair these greens with any savory dish and your taste buds will surely thank you!

Ingredients
- 1/2 cup wataer
- 2 bunches Kale finely chopped
- 1.5 tsp sesame oil
- 1/4 tsp nutmeg
- 1/4 tsp dried thyme
- 1 tsp cilantro
- 1 tbsp fresh sweet corn

Instructions
- Bring water to a simmer in a large pan
- Add kale and the next 3 ingredients, tossing kale in simmered water to wilt
- Cover pan and simmer on low to medium heat for about 15 minutes
- Remove from heat; stirring in maple syrup and balsamic vinegar. Enjoy!
