At least 10 years ago, I watched Emeril Lagasse one day on a cooking show and he prepared some of the most beautiful onion rings. Prior to then, I’d always purchased them. I was intrigued by his tip to soak onions in a seasoned milk bath before dredging and frying. In fact, I was so intrigued that I grabbed an onion, some milk and seasonings and whipped up some onion rings moments after watching the show. Although I rarely fry foods in oil, whenever I’m in the mood for crispy onion rings, I make them at home. These are the easiest, most perfect and delicious onion rings you’ll ever have.
Onion rings are perfect as a side for a nice juicy veggie burger as show here. This past Memorial Day, I went on “Mission Impossible burger” when I found out that Farm Burger restaurant had this amazing vegan burger. As I stood in line looking at the menu board, I noticed I could split the onion rings and French fries, I decided that would be perfect. When it was finally my turn, I was disappointed to find out that the Impossible Burgers had sold out and were on back order. By then, my desire for a burger, fries and onion rings was far gone so I drove across the parking lot to Sprouts market to grab some vegan burgers and cheese. “Mission Impossible” burger was suddenly possible because I was determined to make it at home.
Surprisingly, it had been at least 5 years since I last made some homemade onion rings. I was super excited to create this vegan version that day. They came out flaky, crispy and perfectly seasoned. I made a dip with equal parts ketchup, mayo, a sprinkle of smoked paprika and a spoonful of salad cubes and voila! Mission Impossible burger turned out to be a success despite the original disappointment. When life hands you impossible, you make it possible!
What you’ll need for this super simple Crispy Onion Rings recipe
1 large sweet onion – Sweet onions are my favorite onion to use and ironically are best for frying an roasting. I love the sweet delicate flavor of sweet onions and this is the onion I buy most often.
1 cup unsweetened almond milk – Almond milk is the perfect sub for dairy milk for this recipe. It coats and moistens the onions allowing the dredge to stick to it nicely during the frying process
