
Vegan Shrimp & Grits
I imagine that if I could Eat Like Beyonce for Breakfast, I’d enjoy something like this. As you might be aware, Beyonce used the 22 Days Nutrition plan to prepare for Coachella 2019. Needless to say, it worked for her as she looked AS AMAZING AS SHE ALWAYS Does. The 22 Days Nutrition plan is based around Vegan meals using fresh ingredients that are both soy free and gluten free.
I grew up in a very small town called St. George, SC. Back in the 1980’s, it was noticed that per capita, St. George residents consumed more grits that anywhere else in the country. Needless to say, I LOVE LOVE LOVE LOVE GRITS! Ha! Being from the Lowcountry, I’m also no strange to shrimp and grits so it was only natural, that at some point, I’d be “veganizing” this recipe.
Grits is gluten free! In some cases, it’s not considered gluten free simply because it’s produced and packaged in locations where other gluten free products are produced, but outside of that. Grits is gluten free guys!!!!
I have to thank the heavens above for the inspiration of this post and accompanying Youtube Video. I somehow stumbled across Beyonce’s 22 Days Nutrition plan at the same time I was creating the Vegan Shrimp and Grits recipe and it was a perfect match!
So let’s make this super tasty, rich and decadent recipe that just magically happens to be soy free, gluten free and oil free!!!

- 2 cups tomatoes chopped
- 1/3 cup corn tortillas diced
- 1 tsp sesame oil
- 1/2 tsp black pepper
- 1/4 cup dijon mustard
- 1/3 cup Coconut Heavy Whipping Cream
- 2 tsp seafood seasoning
- 2 cloves garlic minced
- 4 cups shiitake mushrooms sliced
- 1 tbsp fresh parsley finely chopped
Ingredients

- Add tomatoes, red onions, salt and pepper in a large sauce pan and bring to a simmer
- Add vegan no chicken broth and continue to simmer for 1 minute
- Stir in coconut heavy whipping cream and continue to simmer for 1 minute
- Stir in garlic and continue to simmer for 1 minute
- Stir in seafood seasoning until well combined
- Add mushrooms and coat well with sauce; cover and simmer for about 5 minutes
- Remove from heat and stir in fresh chopped parsley. Serve warm over hot and creamy grits. Enjoy!
